Home Chef Food Box - Meal #1:

Home Chef is another one of the food box companies and I just tried my first meal today.  It was a very comforting dish called:  French Onion Shrimp and Grits.  This was quite good.  I would say that if I were to make it again, I'd reduce the amount of grits to about 1/4 cup (vs about 1 cup)  and use larger shrimp.  The grits seem to overtake the meal, and I'd prefer the shrimp to be the star.  It still was quite tasty, and as I said, so comforting.

French Onion Shrimp and Grits

Ingredients:

6 oz Butter
6 Chives
1 Shallot
8 oz Shrimp
1/2 c Instant Grits
2 oz Grated Parmesan
1 oz White Cooking Wine
2 oz Sour Cream


Directions:

  • Bring 2 1/2 cups water to a boil in a small pot
  • Peel and halve the shallot.  Slice into thin strips
  • Mince chives
  • Pat shrimp dry, and season both sides with 1/4 t salt and a pinch of pepper
  • Stir grits into boiling water
  • reduce heat to low and stir constantly until smooth (5-7 minutes)
  • Stir in Parmesan, 3 oz of butter, 1/4 t salt, and a pinch of pepper
  • Remove from burner, cover and keep warm
  • Heat a medium non-stick pan over medium heat.  Add 2 t olive oil and shallot to pan.  Stir occasionally until shallot is golden brown (3-5 minutes)
  • Remove from burner.  Transfer shallot to a plate and season with a pinch of salt.
  • Return pan to medium heat.  Add 2 t olive oil and shrimp to pan and cook undisturbed until browned (1-2 minutes)
  • Flip shrimp, and cook until firm and opaque (1 minute)
  • Stir in wine and scrape pan.  Bring to a simmer and cook until liquid mostly evaporated (2-3 minutes)
  • Remove from burner and still in 3 oz butter.
  • In a mixing bowl, combine shallot, sour cream, chives and a pinch of pepper (reserve a few chives for garnish)
  • Plate two dishes as follows:  grits, shrimp, French onion cream, and remaining chives.
